The Atkins Taco
The last day of my vacation in Mexico City we visited Jill's old house and had lunch at La Onda, an eatery Jill used to enjoyed dining at when she lived there. I ordered a disappointing Sopa de Tortilla, but Tita, our wonderful host, ordered Taco Envuelto (or Taco de Carne Envuelto en Queso Crujiente). I couldn't be more upset at her for not telling me to order it as well. It was a large steak (or carne asada) taco, but instead of a corn or flour tortilla, it was wrapped in a crust of fried cheese. We topped it with some lime, salsa roja, and fresh cilantro and onions. It was awesome. I ate almost half of Tita's taco, it was so good. Gabe immediately recognized it as the Low-Carb answer to Mexican food. I'll take a tortilla made out of cheese over one made out of corn any day.
